Newbie gardener mistake #42. Squash ripen fast! I waited too long and the skins are a bit hard. However, the weight of the bag full of food that I had grown in my hand on the walk up the hill was terribly satisfying. Gonna put that one on repeat.
Squash picked just minutes ago cooking up for lunch in a bit of pastured pig lard. Hello nutrient density!
Anyone have a recipe for over-ripe squash casserole? Send it over!
Update: I decided to try my hand at fermentation. This is what I did with the over-done squash. I’ll update in about a week when I find out if it worked!
